Method
 

  1. Cube and weigh the watermelon. Optionally macerate with lime juice and salt for 30 minutes.
  2. Blend the watermelon until smooth, then strain through a fine mesh sieve.

  3. Heat sugar with water to 230°F, add lime juice and salt, then cool completely.
