- Bring a large pot of water to a boil. Cook the noodles according to the package instructions.
- While the noodles are cooking, heat the oil in a sauté pan over low heat. Add the minced garlic and sauté for about 2 minutes, until golden brown.
- Add the grated ginger to the pan and sauté for an additional 1 minute.
- Remove the pan from heat and add the peanut butter, soy sauce, rice vinegar, sesame oil, sriracha, maple syrup, red pepper flakes, and chili garlic sauce (if using). Whisk everything together, adding hot water gradually to reach your desired consistency.
- Once the noodles are done, drain them and return them to the pot. Pour in half of the peanut sauce and toss to coat the noodles evenly.
- Taste the noodles and adjust the flavor by adding more soy sauce, sriracha, or any other seasonings as needed. Serve the noodles with additional toppings like crushed peanuts, sliced scallions, and extra red pepper flakes.
