Ingredients
  

  • 1 lb Ground breakfast sausage - Mild or hot
  • 8 oz Cream cheese - Softened
  • 1 (10 oz) can Rotel diced tomatoes with green chilies - Undrained
  • 2 cups Sharp cheddar cheese - Shredded
  • 2 cups Bisquick mix - Or other baking mix
  • 1 teaspoon Garlic powder
  • ½ cup Shredded cheese - Optional, for rolling
  • 2 Green onions - Optional, chopped
  • Hot sauce - Optional, to taste
  • Black pepper - Optional, to taste

Method
 

  1. Let cream cheese soften. Cook sausage until browned, drain (leave a little fat), and let cool slightly.
  2. Combine sausage and cream cheese, then add Rotel, cheese, garlic powder, and Bisquick until mixture holds together.
  3. Roll mixture into walnut-sized balls and place on parchment-lined baking sheet.
  4. Bake at 375°F for 15–18 minutes until golden brown and cooked through.
  5. Let cool 5 minutes, serve warm with dipping sauces, or store/reheat as needed.
