Ingredients
  

  • 1 pound Velveeta cheese cubed ($5)
  • 1 pound ground beef $4
  • 2 cans 10 oz each Rotel diced tomatoes with green chilies ($2)
  • 1 tablespoon taco seasoning $0.25
  • ½ medium onion diced (optional) ($0.50)
  • Sliced vegetables carrots, celery, bell peppers

Equipment

  • Large skillet
  • Large microwave-safe bowl or slow cooker
  • Wooden spoon
  • Measuring cups
  • Colander
  • Can opener
  • Serving bowl

Method
 

Brown the Meat
  1. Place your skillet over medium-high heat
  2. Add the ground beef and break it into small pieces
  3. Add diced onion if using
  4. Cook until no pink remains (about 8-10 minutes)
  5. Stir in taco seasoning
  6. Drain excess fat
Prepare the Cheese
  1. Cut Velveeta into 1-inch cubes for faster melting
  2. Place cheese cubes in microwave-safe bowl
  3. Add both cans of Rotel (don't drain!)
  4. Microwave for 5 minutes, stirring every 2 minutes
  5. Keep stirring until smooth
Mix and Serve
  1. Add cooked ground beef to cheese mixture
  2. Stir until well combined
  3. Transfer to serving bowl
  4. Keep warm in slow cooker if desired
  5. Serve with tortilla chips and vegetables
