For the Roast
  • 1 5-7 pound ribeye roast
  • 2 tablespoons kosher salt
  • 2 tablespoons fresh ground black pepper
  • 4 cloves garlic minced
  • 2 tablespoons fresh rosemary chopped
  • 2 tablespoons olive oil

Equipment

  • Roasting pan with rack
  • Digital meat thermometer
  • Kitchen twine (optional)
  • Sharp carving knife
  • Aluminum foil

Method
 

24 Hours Before
  1. Remove roast from refrigerator
  2. Pat dry thoroughly with paper towels
  3. Mix salt, pepper, garlic, and rosemary
  4. Rub roast with olive oil
  5. Apply seasoning mixture evenly
  6. Place uncovered in refrigerator
Day Of Cooking
  1. Remove from refrigerator 2 hours before cooking
  2. Preheat oven to 250°F (121°C)
  3. Place roast fat-side up on rack
Cooking Process
  1. Insert thermometer into center
  2. Cook at 250°F until internal temp reaches 120°F (about 25 min/pound)
  3. Remove and tent with foil
  4. Increase oven to 500°F (260°C)
  5. Return for final sear (8-10 minutes)
  6. Remove at 125°F for medium-rare
  7. Rest 15-20 minutes before carving
