Ingredients

Basics
  • 1 cup shredded mozzarella cheese - or substitute from options
  • 24 slices pepperoni - regular or turkey
  • 1 pinch garlic powder - optional
  • 1 pinch Italian herbs - optional
Alternative Cheese Options
  • sharp cheddar cheese - substitution
  • parmesan cheese - extra crunchy
  • pepper jack - for heat
  • mix of mozzarella + parmesan - best crisp + melt combo

Equipment

  • 1 Baking sheet (Standard or rimmed sheet pan)
  • 1 Parchment paper (Essential to prevent sticking)
  • 1 Measuring spoon (For tablespoon cheese mounds)
  • 1 Cooling rack (Helps crisps firm faster)

Method

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Spoon 1-tablespoon mounds of shredded cheese onto the sheet, spacing them 2 inches apart.
  3. Press one pepperoni slice onto each cheese mound.
  4. Sprinkle optional garlic powder or Italian herbs if desired.
  5. Bake for 8–10 minutes until edges turn golden and cheese bubbles.
  6. Let crisps cool on the pan for 5 minutes before eating. Cooling allows them to firm up and become crunchy.
