Ingredients
  

  • 1 pound penne pasta
  • 1 pound andouille sausage sliced
  • 1 pound chicken breast cubed
  • 1 large onion diced
  • 1 green bell pepper diced
  • 3 celery stalks chopped
  • 4 cloves garlic minced
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 4 cups chicken broth
  • 1 14.5 oz can diced tomatoes
  • 2 tablespoons tomato paste
  • 2 bay leaves
  • Salt and pepper to taste
  • Fresh parsley or green onions for garnish

Equipment

  • Large Dutch oven (6-quart or larger)
  • Sharp knife
  • Cutting board
  • Measuring cups and spoons
  • Wooden spoon

Method
 

  1. Heat olive oil in large Dutch oven over medium-high heat
  2. Brown sausage (5 min), remove and set aside
  3. Cook chicken until golden (5-7 min), remove
  4. Sauté onion, pepper, celery (5 min)
  5. Add garlic (1 min)
  6. Return meats to pot
  7. Add seasonings, tomatoes, paste
  8. Add pasta and broth
  9. Add bay leaves
  10. Boil, then reduce to medium-low
  11. Cover and simmer (12-15 min) until pasta is al dente
