- Pound chicken breasts to ¾-inch thickness between plastic wrap. Pat dry with paper towels. Preheat oven to 425°F or air fryer to 375°F.
- In a shallow dish, combine parmesan, panko, regular breadcrumbs, Italian seasoning, garlic powder, onion powder, paprika, salt, and pepper.
- Spread mayo on both sides of each chicken breast. Press into the breadcrumb-Parmesan mixture until fully coated. Let rest 5 minutes.
- Line baking sheet with parchment, drizzle with oil, and arrange chicken with space between. Bake 20–25 min until internal temp hits 165°F. Broil last 2 min for golden crust.
- Spray air fryer basket lightly with oil. Place chicken in basket (work in batches if needed). Air fry at 375°F for 10–12 min, flipping halfway through.
- Let chicken rest 3–5 min before serving. Garnish with parsley and extra parmesan. Optional: Add ½ tablespoon butter on each piece for restaurant-style richness.
