- Heat olive oil in a large skillet or wide-bottomed pot over medium heat.
- Add the diced onion and minced garlic, cooking until the onions are softened and fragrant.
- Stir in the ground beef and taco seasoning, cooking until the beef is browned and fully cooked through.
- Add the diced tomatoes (with juices) and diced green chiles (with juices) to the beef mixture, stirring to combine.
- Pour in the uncooked pasta and beef broth, stirring to mix everything together. It’s fine if the pasta isn’t fully submerged.
- Place a lid on the pot, increase the heat to medium-high, and bring the broth to a boil. Once boiling, give the pasta a stir, then reduce the heat to medium-low. Cook with the lid on, stirring occasionally, for about 10 minutes, or until the pasta is tender and the sauce has thickened.
- Once the pasta is cooked, stir in the shredded cheddar cheese until melted and well combined.
- Top with sliced green onions and serve warm.
