Ingredients
  

  • 12 oz Tortilla chips - Thick cut for best hold
  • 1.5 cups Shredded cheddar - Or Mexican blend
  • 1.5 cups Monterey Jack cheese - Freshly shredded recommended
  • 1 lb Ground beef or chicken - Seasoned and cooked
  • 1 cup Black beans - Drained and rinsed
  • 1 Diced tomatoes - Fresh or canned
  • ½ Red onion - Diced
  • 1–2 Jalapeño peppers - Fresh or pickled
  • 1 tablespoon Taco seasoning - Or homemade mix
  • ½ teaspoon Garlic powder
  • ½ teaspoon Cumin
  • ½ teaspoon Chili powder - Optional for extra heat
  • 1 tablespoon Lime juice - Fresh-squeezed preferred
  • Hot sauce - To taste
  • Sour cream - For topping
  • Guacamole - For topping
  • Fresh cilantro - Chopped
  • Green onions - Sliced
  • Pickled jalapeños - Optional garnish
  • tablespoon Olive oil - Light brush on chips before cheese

Equipment

  • 1 Large skillet (For cooking protein)
  • 1 Cheese grater (For fresh shredded cheese)

Method
 

  1. Preheat oven to 425°F and line a large baking sheet with foil.
  2. In a skillet, cook your protein with taco seasoning, garlic powder, cumin, and chili powder. Set aside when done.
  3. Dice tomatoes, onions, jalapeños, and shred the cheese. Open and rinse beans.
  4. On the baking sheet, layer half the chips, brush with olive oil, then top with half the cheese, beans, and meat. Repeat with remaining ingredients.
  5. Bake for 8–10 minutes until cheese is melted and bubbling. Remove and add fresh toppings like sour cream, guacamole, and cilantro before serving.
