Method
- Preheat oven to 350°F (175°C). Lightly grease a 9-inch pie dish.
- In a blender, combine eggs, milk, and vanilla extract.
- Add melted butter and blend until combined.
- Add sugar, flour, and salt. Blend until smooth, about 30 seconds.
- Stir in shredded coconut by hand.
- Pour mixture into prepared pie dish.
- Bake for 50-60 minutes until golden brown and set.
- Cool completely before serving.
