  • 1.5 cups dried lentils - red or green
  • 6 cups vegetable broth - low-sodium recommended
  • 2 cups water
  • 1 bay leaf
  • 1 teaspoon salt - adjust to taste

  • 3 tablespoons olive oil
  • 1 large onion - diced
  • 3 carrots - diced
  • 3 stalks celery - diced
  • 6 cloves garlic - minced
  • 1 can (14 oz) diced tomatoes - with juice

  • 1 teaspoon paprika

Method
 

  1. Rinse lentils, dice vegetables, mince garlic, and measure spices.
  2. Cook onions, carrots, celery, and garlic in olive oil until softened and fragrant.
  3. Add cumin, turmeric, paprika, pepper, and cayenne; stir briefly to toast the spices.
  4. Add broth, water, lentils, bay leaf, and tomatoes; simmer until lentils are tender.
  5. Remove bay leaf, add lemon juice and herbs, adjust seasoning, and serve.
