Ingredients
  

For the Base:
  • 8 oz Cream cheese - Softened
  • 1 cup Powdered sugar - Sifted
  • 2 tablespoon Fresh key lime juice - Adjust to taste
  • 2 teaspoon Key lime zest - Finely grated
  • 2 tablespoon Heavy cream
  • ½ teaspoon Vanilla extract
  • 1 pinch Salt
For the Coating:
  • 2 cups White chocolate chips
  • 2 teaspoon Coconut oil
  • ½ cup Graham cracker crumbs - For sprinkling
  • Extra lime zest - Garnish
Optional Extras:
  • 1–2 drops Green food coloring - Optional for color
  • 2 tablespoon Condensed milk - Extra richness
  • 1 tablespoon Butter - For smoother texture

Equipment

  • Electric mixer (for a smooth cream cheese base)
  • Cookie scoop or spoon (for even truffle portions)
  • Mixing bowls (separate for base and coating)
  • Parchment paper (prevents sticking)
  • Fork (for dipping truffles)
  • Microwave or double boiler (to melt chocolate)

Method
 

  1. Beat softened cream cheese until smooth. Gradually add powdered sugar, then mix in lime juice, zest, cream, vanilla, and salt. Taste and adjust tartness. Chill mixture in the fridge for 2 hours to firm up.
  2. Scoop mixture into even portions. Roll quickly between palms into balls. Place on parchment-lined tray and chill for 30 minutes.
  3. Melt white chocolate with coconut oil (microwave or double boiler). Let chocolate cool slightly before dipping. Use fork to dip each truffle, tapping off excess.
  4. Sprinkle lime zest or graham crumbs while chocolate is soft. Chill tray in fridge for 15 minutes until coating is set. Serve or store as directed.
