  • 2 ½ cups All-purpose flour
  • 1 cup Butter - Room temperature
  • ¾ cup Powdered sugar
  • 1 Large egg
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Baking powder
  • ¼ teaspoon Salt
Cream Cheese Frosting:
  • 8 oz Cream cheese - Room temperature
  • ¾ cup Powdered sugar - Add more to taste
  • 1 teaspoon Vanilla extract
  • 2–3 tablespoon Heavy cream - Adjust for spreadable texture
Fruit Toppings:
  • ½ cup Strawberries - Thinly sliced
  • ½ cup Blueberries
  • 2 Kiwis - Peeled and sliced
  • ½ cup Mandarin oranges - Drained if canned
  • ½ cup Grapes - Halved if large
  • ½ cup Raspberries
Optional Glaze:
  • 2 tablespoon Apricot jam
  • 1 tablespoon Water
  • 1 teaspoon Lemon juice - Optional

Method
 

  1. Cream butter and powdered sugar until light and fluffy. Beat in egg and vanilla. Mix in flour, baking powder, and salt until just combined.

  2. Press dough evenly into a greased pizza pan. Bake at 350°F for 12–15 minutes until lightly golden. Let cool completely.
  3. Beat cream cheese until smooth. Add powdered sugar, vanilla, and heavy cream. Spread over cooled cookie crust.

  4. Wash, dry, and slice fruit. Arrange in decorative patterns on top of the frosting.
