Ingredients
  

For the Pasta
  • 1 pound 450g fettuccine or tagliatelle
  • 1 pound 450g mixed mushrooms (cremini, shiitake, or button), sliced
  • 4 tablespoons butter divided
  • 3 cloves garlic minced
  • 2 shallots finely diced
  • ½ cup white wine optional
  • 1 cup heavy cream
  • ½ cup pasta water reserved
  • ½ cup freshly grated Parmesan cheese plus more for serving
  • 2 tablespoons fresh parsley chopped
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper to taste

Equipment

  • Large pot for cooking pasta
  • Large skillet or sauté pan
  • Cheese grater
  • Truffle shaver (if using fresh truffles)
  • Wooden spoon or tongs for tossing
  • Measuring cups and spoons

Method
 

Prepare Pasta
  1. Bring a large pot of salted water to boil
  2. Cook pasta according to package instructions until al dente
  3. Reserve ½ cup pasta water before draining
  4. Drain pasta and set aside
Cook Mushrooms
  1. Heat 2 tablespoons butter and olive oil in a large skillet over medium-high heat
  2. Add mushrooms and cook until golden brown (8-10 minutes)
  3. Season with salt and pepper
  4. Remove mushrooms and set aside
Make Sauce
  1. In the same pan, add remaining butter
  2. Sauté shallots until softened (2-3 minutes)
  3. Add garlic and cook until fragrant (1 minute)
  4. Add white wine if using, simmer until reduced by half
  5. Add heavy cream and simmer until slightly thickened
  6. Return mushrooms to the pan
Finish Dish
  1. Add cooked pasta to the sauce
  2. Stir in Parmesan cheese
  3. Add pasta water as needed to reach desired consistency
  4. Toss until pasta is well coated
  5. Season with salt and pepper to taste
Serve
  1. Garnish with fresh parsley
  2. Top with additional grated Parmesan
  3. Serve immediately
