Prepare Pasta
- Bring a large pot of salted water to boil
- Cook pasta according to package instructions until al dente
- Reserve ½ cup pasta water before draining
- Drain pasta and set aside
Cook Mushrooms
- Heat 2 tablespoons butter and olive oil in a large skillet over medium-high heat
- Add mushrooms and cook until golden brown (8-10 minutes)
- Season with salt and pepper
- Remove mushrooms and set aside
Make Sauce
- In the same pan, add remaining butter
- Sauté shallots until softened (2-3 minutes)
- Add garlic and cook until fragrant (1 minute)
- Add white wine if using, simmer until reduced by half
- Add heavy cream and simmer until slightly thickened
- Return mushrooms to the pan
Finish Dish
- Add cooked pasta to the sauce
- Stir in Parmesan cheese
- Add pasta water as needed to reach desired consistency
- Toss until pasta is well coated
- Season with salt and pepper to taste
Serve
- Garnish with fresh parsley
- Top with additional grated Parmesan
- Serve immediately
