the Salmon Bites:
  • 1 pound fresh salmon fillet skin removed
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper
  • 1 tablespoon fresh lemon juice
the Dipping Sauce:
  • ¼ cup mayonnaise
  • 1 tablespoon sriracha sauce
  • 1 teaspoon honey
  • ½ teaspoon sesame oil

Equipment

  • Sharp knife for cutting salmon
  • Non-stick skillet or well-seasoned cast-iron pan
  • Fish spatula
  • Paper Towels
  • Mixing bowls

Method
 

Prep Salmon:
  1. Pat salmon dry with paper towels
  2. Cut into 1-inch cubes
  3. Place in medium bowl
Season:
  1. Drizzle with olive oil
  2. Add garlic powder, paprika, salt, and pepper
  3. Toss gently to coat
  4. Rest 5 minutes
Cook:
  1. Heat non-stick skillet over medium-high heat
  2. Cook salmon 2-3 minutes per side until golden
  3. Work in batches if needed
  4. Drizzle with lemon juice before serving
Make Sauce:
  1. Combine all sauce ingredients
  2. Whisk until smooth
