Method
- Season salmon with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Sear salmon for 3-4 minutes per side until golden. Remove from pan.
In the same pan:
- Melt butter
- Add minced garlic, cook 1 minute
- Add cream, sun-dried tomatoes, Italian seasoning
- Simmer 3-4 minutes until slightly thickened
- Stir in parmesan cheese
- Return salmon to pan, spoon sauce over fish.
- Cook 3-4 minutes until salmon is done.
- Garnish with fresh parsley.
