Ingredients
  

the Salmon:
  • 4 salmon fillets 6 oz each
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoon olive oil
the Creamy Sauce:
  • 4 tablespoon butter
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • ½ cup sun-dried tomatoes chopped
  • 1 cup fresh spinach optional
  • ½ cup grated parmesan cheese
  • 1 teaspoon Italian seasoning
  • Fresh parsley for garnish

Equipment

  • Large oven-safe skillet (preferably cast iron)
  • Paper Towels
  • Sharp knife
  • Measuring spoons
  • Fish spatula (recommended but not required)

Method
 

  1. Season salmon with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Sear salmon for 3-4 minutes per side until golden. Remove from pan.
In the same pan:
  1. Melt butter
  2. Add minced garlic, cook 1 minute
  3. Add cream, sun-dried tomatoes, Italian seasoning
  4. Simmer 3-4 minutes until slightly thickened
  5. Stir in parmesan cheese
  6. Return salmon to pan, spoon sauce over fish.
  7. Cook 3-4 minutes until salmon is done.
  8. Garnish with fresh parsley.
