Ingredients
  

For the Chicken
  • 2 pounds boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 medium onion diced
Seasoning Mix
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon cayenne pepper optional
For Serving
  • 12-15 corn or flour tortillas
  • 2 cups shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup shredded Mexican cheese blend
  • 1 cup fresh cilantro chopped
  • 2 limes cut into wedges
  • 1 avocado sliced
  • Sour cream optional
  • Hot sauce optional

Equipment

  • Large skillet or frying pan

Method
 

Prep Chicken
  1. Cut chicken into ½-inch cubes
  2. Mix all seasonings in a bowl
  3. Toss chicken with seasonings until coated
Cook
  1. Heat oil in large skillet over medium-high heat
  2. Cook onion 2-3 minutes until translucent
  3. Add garlic, cook 30 seconds
  4. Add chicken, cook 8-10 minutes until done
Warm Tortillas
  1. Heat in dry skillet 30 seconds per side
  2. Or wrap in foil, warm in 350°F oven for 10 minutes
Assemble
  1. Fill tortillas with chicken
  2. Add toppings as desired
  3. Serve with lime wedges
