Ingredients
  

  • For the Fajita Seasoning:

  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon oregano
  • ¼ teaspoon cayenne pepper
  • 1 teaspoon salt
  • ½ teaspoon black pepper
For the Pasta:
  • 1 pound penne pasta
  • pounds chicken breast sliced
  • 3 bell peppers mix of colors, sliced
  • 1 large onion sliced
  • 4 cloves garlic minced
  • 2 cups heavy cream
  • 1 cup chicken broth
  • 1 cup freshly grated Parmesan
  • 2 tablespoons olive oil
  • Fresh cilantro for garnish
  • Lime wedges for serving

Equipment

  • Large pasta pot
  • Large skillet or sauté pan (12-inch recommended)
  • Sharp knife for cutting vegetables
  • Colander
  • Measuring cups and spoons
  • Wooden spoon or spatula for stirring

Method
 

Mix Seasoning
  1. Combine all fajita seasoning ingredients in a bowl
  2. Set aside
Prep Pasta
  1. Cook pasta in salted water until al dente
  2. Reserve 1 cup pasta water
  3. Drain and set aside
Cook Chicken
  1. Season chicken with half the fajita seasoning
  2. Heat 1 tablespoon oil in large skillet
  3. Cook chicken 6-8 minutes until golden
  4. Remove to plate
Cook Vegetables
  1. Add remaining oil to pan
  2. Sauté peppers and onions 5-6 minutes
  3. Add garlic, cook 30 seconds
Make Sauce
  1. Add broth, scraping pan bottom
  2. Pour in cream and remaining seasoning
  3. Simmer 3-4 minutes until thickened
  4. Stir in Parmesan until melted
Combine & Finish
  1. Add pasta to sauce
  2. Return chicken to pan
  3. Toss everything together
  4. Add pasta water if needed
  5. Garnish with cilantro
  6. Serve with lime wedges
