- Preheat oven to 325°F (165°C)
- Gently whisk eggs until just combined
- Add sugar and salt, whisk until incorporated
- Gradually stir in milk and vanilla extract
- Strain mixture through fine-mesh strainer
- Pour into prepared baking dish(es)
- Sprinkle nutmeg on top
- Place in water bath
- Bake 45-55 minutes (30-35 for individual cups)
