Ingredients
  

  • 4 large eggs room temperature
  • 2 cups whole milk
  • ½ cup granulated sugar
  • ¼ teaspoon salt
  • 1 teaspoon pure vanilla extract
  • ¼ teaspoon ground nutmeg plus extra for garnish
  • Hot water for water bath

  • 1.5-quart baking dish or 6 individual custard cups
  • Large roasting pan
  • Fine-mesh strainer
  • Mixing bowls
  • Whisk
  • Kettle for hot water

Method
 

  1. Preheat oven to 325°F (165°C)
  2. Gently whisk eggs until just combined
  3. Add sugar and salt, whisk until incorporated
  4. Gradually stir in milk and vanilla extract
  5. Strain mixture through fine-mesh strainer
  6. Pour into prepared baking dish(es)
  7. Sprinkle nutmeg on top
  8. Place in water bath
  9. Bake 45-55 minutes (30-35 for individual cups)
