Ingredients
  

  • 4 slices thick-cut bacon - diced
  • 2 large boneless chicken breasts - or 3 cups shredded rotisserie chicken
  • salt & pepper - to taste
  • 8 oz cream cheese - full-fat for best texture
  • 1 packet ranch seasoning - about 1 oz
  • 2 cups chicken broth - low sodium if preferred
  • 1 lb fresh potato gnocchi
  • 1 cup shredded cheddar cheese - or Monterey Jack
  • ½ cup heavy cream or milk
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder - optional
  • black pepper - to taste
  • 1 cup fresh spinach - optional
  • 2 tablespoon green onions - optional garnish
  • red pepper flakes - optional heat

Equipment

  • 1 Large skillet or Dutch oven (For cooking everything in one pot)
  • 1 Sharp knife (For chopping bacon and chicken)
  • 1 Cutting board
  • 1 Wooden spoon or spatula (For stirring)
  • 1 Whisk (For blending cream cheese sauce)

Method
 

  1. Chop the bacon into small pieces, cook until crispy, then set aside while leaving the fat in the pan.
  2. Season chicken breasts with salt and pepper, cook in the bacon fat until done, then shred or chop.
  3. Melt cream cheese in the pan, whisk in ranch seasoning, and slowly add chicken broth until smooth.
  4. Add the gnocchi directly to the sauce, stir to coat, and simmer until tender.
  5. Return chicken to the pan, add half the bacon, cheese, cream, and seasonings, and stir until melted.
  6. Top with the remaining bacon and any garnishes, then serve hot.
