Ingredients
  

  • 1 tablespoon Butter
  • 1 tablespoon Olive oil
  • 1 Onion - Diced
  • 2 Carrots - Sliced into rounds
  • 2 Celery stalks - Sliced
  • 3 cloves Garlic - Minced
  • ¼ cup All-purpose flour
  • 8 cups Chicken broth - Low-sodium preferred
  • 1–1.5 lbs Chicken - Breasts or thighs, boneless
  • ½ teaspoon Dried thyme
  • ½ teaspoon Dried rosemary
  • 1 Bay leaf - Remove before serving
  • 1 pinch Nutmeg - Optional, adds warmth
  • Salt and pepper - To taste
  • 1 cup Heavy cream - Or substitute (see notes)
  • 2 oz Cream cheese - Optional, for extra richness
  • 6 oz Egg noodles - Or preferred pasta
  • Fresh parsley - For garnish

Method
 

  1. Sauté onion, carrots, and celery in butter and olive oil until softened.
  2. Add minced garlic, then sprinkle in flour and stir to form a roux.
  3. Gradually whisk in chicken broth and add seasonings and chicken. Bring to a boil, then simmer.
  4. Cook chicken until done, remove, and shred or dice.
  5. Return chicken to pot and cook noodles until tender.
  6. Temper and add cream, optional cream cheese, and nutmeg. Simmer gently.
  7. Remove bay leaf, garnish with parsley, and serve.
