  • 2 large sweet potatoes peeled and diced
  • 1 tablespoon avocado oil spray for roasting
  • ½ teaspoon salt for seasoning
  • ½ teaspoon paprika adds mild smokiness
  • ½ teaspoon garlic powder for savory depth
  • 1.1 lbs grassfed ground beef for lean flavorful protein
  • ¾ teaspoon salt seasoning
  • 1 teaspoon paprika adds smoky flavor
  • 1 teaspoon chili powder for heat
  • 1 teaspoon garlic powder savory note
  • 1 teaspoon onion powder for umami
  • 1 large avocado sliced adds creaminess
  • 18 oz 2% cottage cheese rich in protein
  • Crushed red pepper for spice
  • Hot honey optional for drizzle

Method
 

  1. Add the sweet potato cubes to the air fryer and lightly coat with oil. Sprinkle with the salt, paprika, and garlic powder, tossing to evenly coat. Air fry for 18 minutes, shaking halfway through.
  2. In a skillet, cook the ground beef with the seasoning until browned, about 5-7 minutes.
  3. Assemble the bowl by adding 1 cup of roasted sweet potatoes, 4 oz of the cooked ground beef, ⅓ of the sliced avocado, and ½ cup of cottage cheese to a serving dish.
  4. Top with crushed red pepper and drizzle with hot honey. Finish with a light seasoning of salt and pepper, if desired.
