Method
 

  1. Warm the oven to 375°F so it’s ready for baking.
  2. Slice the chiles lengthwise and arrange half in the baking dish, scattering half the cheese on top; repeat with remaining chiles and cheese.
  3. Blend the milk, eggs, flour, salt, paprika, and pepper until the mixture is completely smooth, then pour it evenly over the layers.
  4. Bake for 40–50 minutes, or until the top turns golden and the center is set, then remove and cut into portions.
