Ingredients
  

For the special sauce:
  • cup mayonnaise adds creamy texture
  • cup ketchup sweet and tangy
  • 2 tablespoons pickle juice for a tangy bite
  • 1 tablespoon yellow mustard for a zesty kick
  • 1 teaspoon Worcestershire sauce adds depth of flavor
  • Salt and freshly ground black pepper to taste
For the quesadillas:
  • 1 pound ground beef use 80/20 for the best flavor
  • 4 8-inch flour tortillas (use any preferred brand or make homemade)
  • 4 cups shredded cheddar cheese for melting and flavor
  • 24 dill pickle chips optional but adds classic cheeseburger flavor
For the wedge salads:
  • 1 head iceberg lettuce cored and cut into 4 wedges
  • 8 cherry tomatoes quartered for freshness
  • 1 shallot finely chopped for a mild onion flavor

Method
 

  1. Make the special sauce: In a small bowl, combine mayonnaise, ketchup, pickle juice, mustard, Worcestershire sauce, and salt and pepper to taste. Set aside.
  2. Cook the beef: In a large skillet over medium-high heat, cook ground beef, stirring occasionally, until browned and fully cooked, about 6 to 8 minutes. Drain excess fat.
  3. Prepare the quesadillas: Wipe out the skillet and coat with nonstick spray. Heat over medium heat. Place one tortilla in the skillet. Sprinkle half of the tortilla with ½ cup shredded cheese, followed by a quarter of the cooked beef. Top with pickle slices if desired.
  4. Finish the quesadilla: Sprinkle the remaining ½ cup of cheese on top. Fold the tortilla in half and cook until the cheese is melted and the tortilla is golden brown on the first side, about 2 minutes. Flip the quesadilla and cook the other side until golden and crispy. Transfer to a plate and cover to keep warm. Repeat with remaining tortillas, cheese, and beef.
  5. Prepare the wedge salads: Place one wedge of iceberg lettuce on each plate. Top with quartered cherry tomatoes and finely chopped shallot. Drizzle with special sauce.
