- Make the special sauce: In a small bowl, combine mayonnaise, ketchup, pickle juice, mustard, Worcestershire sauce, and salt and pepper to taste. Set aside.
- Cook the beef: In a large skillet over medium-high heat, cook ground beef, stirring occasionally, until browned and fully cooked, about 6 to 8 minutes. Drain excess fat.
- Prepare the quesadillas: Wipe out the skillet and coat with nonstick spray. Heat over medium heat. Place one tortilla in the skillet. Sprinkle half of the tortilla with ½ cup shredded cheese, followed by a quarter of the cooked beef. Top with pickle slices if desired.
- Finish the quesadilla: Sprinkle the remaining ½ cup of cheese on top. Fold the tortilla in half and cook until the cheese is melted and the tortilla is golden brown on the first side, about 2 minutes. Flip the quesadilla and cook the other side until golden and crispy. Transfer to a plate and cover to keep warm. Repeat with remaining tortillas, cheese, and beef.
- Prepare the wedge salads: Place one wedge of iceberg lettuce on each plate. Top with quartered cherry tomatoes and finely chopped shallot. Drizzle with special sauce.
