- Take cream cheese out of fridge 1 hour before making. Let it sit at room temperature until soft to the touch. Do not microwave, or it becomes runny.
- Add softened cream cheese to a mixing bowl. Beat with an electric mixer on medium speed for 1–2 minutes until fluffy and smooth, scraping down sides as needed.
- Mix in brown sugar and granulated sugar. Beat for another minute until combined, then add vanilla extract and mix until smooth.
- Gently fold in caramel sauce with a spatula or beat on low speed. Do not overmix—some caramel streaks are ideal.
- Spoon dip into a serving bowl. Smooth the top, drizzle with caramel sauce, sprinkle with toffee bits, and add crushed graham crackers around the edges.
- Slice apples into thin wedges right before serving. Toss with lemon juice to prevent browning and arrange around the dip bowl.
