Ingredients
  

  • 1 tablespoon Olive oil
  • 12 oz Andouille sausage - Sliced into rounds
  • 1 cup Onion - Diced
  • 1 cup Celery - Diced
  • 1 cup Green bell pepper - Diced
  • 3 cloves Garlic - Minced
  • 1 ½ teaspoon Cajun seasoning - Adjust to taste
  • 1 cup Long-grain white rice - Rinsed and drained
  • 1 can Fire-roasted tomatoes - 14.5 oz, with juice
  • 2 cups Chicken broth - Preferably low sodium
  • 1 Bay leaf - Whole
  • 2 sprigs Fresh thyme - Or ½ teaspoon dried thyme
  • Salt & pepper - To taste
  • 2 tablespoon Green onions - Sliced, for garnish
  • 2 tablespoon Fresh parsley - Chopped, for garnish
  • 1 tablespoon Pickle juice - Optional, added at the end

Equipment

  • Large skillet with lid - 12-inch heavy-bottomed or cast iron

Method
 

  1. Prepare and brown the sausage
  2. Sauté vegetables and toast rice
  3. Add liquids, sausage, and seasonings to skillet
  4. Simmer covered until rice is tender
  5. Let rest, fluff rice, and garnish
