Ingredients
  

For the Chicken
  • 1.5 lbs chicken breast thinly sliced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
For the Vegetables
  • 2 medium onions thinly sliced
  • 2 green bell peppers sliced
  • 2 tablespoons butter
  • 2 cloves garlic minced
For Assembly
  • 4 hoagie rolls
  • 8 slices provolone cheese
  • Optional: sliced mushrooms hot peppers, mayonnaise

Method
 

Prep the Ingredients
  1. Slice chicken breast against the grain into very thin strips
  2. Cut onions and peppers into thin slices
  3. Split hoagie rolls lengthwise, keeping them connected on one side
Cook the Vegetables
  1. Heat butter in a large skillet over medium heat
  2. Add sliced onions and peppers
  3. Cook for 15-20 minutes, stirring occasionally, until caramelized
  4. Remove vegetables and set aside
Cook the Chicken
  1. In the same skillet, heat olive oil over medium-high heat
  2. Add sliced chicken, garlic powder, Italian seasoning, salt, and pepper
  3. Cook for 5-7 minutes until chicken is no longer pink
  4. Return vegetables to the pan and mix well
Assembly
  1. Preheat broiler
  2. Place hoagie rolls on a baking sheet
  3. Divide chicken and vegetable mixture among rolls
  4. Top each with 2 slices of provolone cheese
  5. Broil for 1-2 minutes until cheese melts and bubbles
