Ingredients
  

  • ½ cup Dijon mustard
  • ½ cup honey
  • ¼ cup mayonnaise
  • 1 teaspoon fresh lemon juice
  • Salt and pepper to taste
  • 4 boneless skinless chicken breasts
  • 8 slices bacon
  • 2 cups fresh mushrooms sliced
  • 2 cups Colby Jack cheese shredded
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Method
 

Make Honey Mustard Sauce
  1. Whisk together Dijon mustard and honey
  2. Add mayonnaise and lemon juice
  3. Season with salt and pepper
Cook Bacon
  1. Cook bacon until crispy
  2. Drain on paper towels
Prepare Chicken
  1. Preheat oven to 375°F
  2. Season chicken with salt and pepper
  3. Sear in oiled skillet, 3-4 minutes per side
Cook Mushrooms
  1. Sauté mushrooms until golden
  2. Set aside
Assemble & Bake
  1. Brush chicken with honey mustard
  2. Top with mushrooms
  3. Add bacon pieces
  4. Sprinkle with cheese
  5. Bake 15-20 minutes (165°F internal temp)
